Balsamic Parmesan Roasted Asparagus and Tomatoes

Up next is another asparagus dish and this time it’s roasted asparagus and tomatoes covered in melted parmesan cheese and drizzled with a balsamic reduction. Roasting the asparagus really brings out its flavour and the roasted tomatoes that are slightly caramelized on the outside and yet still bursting with juiciness on the inside go amazingly well together!


The sweet and tart balsamic reduction brings everything home and complements the parmesan cheese perfectly!

Ingredients :
  • 1 1/2 pounds asparagus, trimmed
  • 1 1/2 cups cherry tomatoes, cut in half
  • 1 tablespoon oil
  • salt and pepper to taste
  • 1/2 cup parmigiano reggiano (parmesan), grated
  • 1/2 cup balsamic vinegar
  • 2 tablespoons basil, sliced
Instructions :
  1. Toss the asparagus and tomatoes in the oil, salt and pepper, place on a baking sheet in a single layer, sprinkle on the parmesan and roast in a preheated 400F/200C oven until they start to caramelize, about 15-20 minutes, mixing half way through.
  2. Meanwhile, simmer the balsamic vinegar until it starts to thicken, about 10 minutes.
  3. Serve the asparagus and tomatoes warm drizzled with the balsamic vinegar and garnished with the fresh basil.

One Skillet Cashew Chicken Stir Fry Recipe

INGREDIENTS

  • 1 Tbsp olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, julienned
  • 1 cup sugar snap peas
  • ½ cup carrots, julienned
  • ⅓ cup unsalted cashews
  • 4 green onions, chopped

For the sauce:

  • 4 Tbsp tamari (or soy sauce)
  • 3 Tbsp all-natural peanut butter
  • 2 Tbsp honey
  • 1 tsp. sesame oil
  • 1 Tbsp grated ginger
  • 2 or 3 Tbsp water

INSTRUCTIONS

  1. To make the sauce, whisk together tamari (or soy sauce), peanut butter, honey, sesame oil, and grated ginger in a small bowl. Whisk in 2 or 3 tablespoons of water, depending on the consistency you prefer, and set aside.
  2. In a large skillet over medium heat, drizzle olive oil and add chicken. Season with salt and pepper and sauté until lightly browned, about 4 to 5 minutes. Add the garlic and sauté for about 30 seconds, mixing it with the chicken.
  3. Add broccoli, bell pepper, snap peas and carrots to the skillet, incorporating everything together. Cook an additional 5 minutes, until veggies are tender and chicken is cooked through, then add cashews and green onions and drizzle the peanut sauce over top.
  4. Mix everything together with the sauce, coating well, and cook for one more minute. Serve and enjoy!

It was great, but not so great because lets face it, while the food tastes delicious, it is packed with tons of sodium and other not so healthy ingredients. Figuring out how to make your favorite restaurant dishes at home, is actually pretty simple, but does take some work to get it just right. I am excited to have finally perfected the Copycat PF Chang’s Spicy Green Beans.

Ingredients

  • 1-2 lbs green beans , trimmed and cut into 2 inch pieces
  • 2 green onions , chopped thinly
  • 1 tsp red pepper flakes + 1/4 tsp
  • 4 garlic cloves , minced
  • 2 TBS sesame oil
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 2 TBS low sodium soy sauce
  • 1 TBS rice vinegar
  • 1 tsp white granulated sugar
  • 1/4 cup water
  • 1 tsp corn starch

Instructions

  1. In a small bowl mix together soy sauce, rice vinegar, sugar, water, corn starch, salt, and pepper; set aside.
  2. In a wok or large skillet, add oil; let heat over medium high heat for 30 seconds. Add garlic, green onions, and 1 tsp red pepper flakes. Stir fry quickly, for about 30 seconds. Add green beans and stir constantly until they are almost fully cooked, about 3 minutes (should turn deep green). Push green beans to the side, pour sauce into pan, stir to distribute sauce to bottom of pan. Cook for 30 seconds over medium high heat; allow to come to a boil (shouldn't take long), reduce heat to low, stir to coat green beans with sauce. Cook for 30 more seconds.
  3. Serve and enjoy!
